How to Cut Butternut Squash

Butternut squash is amazing, delicious, healthy, and… a serious pain in the butt to break down. If you’v ever cooked with butternut squash, you’ve probably wondered if there is a easier way to cut and peel it.

I’m going to show you how to peel, clean, and cut butternut Squash in Six Simple Steps.

You’ll need:

  1. A butternut squash (duh)
  2. A good heavy chef’s knife
  3. A cutting board
  4. A kitchen towel
  5. And a spoon… that’s it.

Here are a couple of tips before you get started:

To begin, place a kitchen towel on your work surface. Lay your cutting board atop the kitchen towel. This is one of my number one cooking tips! Always keep a towel under your cutting board. It catches messes, but more importantly, it stops your cutting board from wiggling around.Make sure your knife is sharp and strong. Wobbly, dull knives are your worst enemy. Also, don’t worry about being perfect or cutting off too much of the squash. If you really hate food waste, save the peel and attached flesh for stock. You can do this- no need to buy frozen or bagged cubed squash ever again. Save your money and display some serious bad-assery in the kitchen!

  1. Cut off the stem end and the fat end to create a flat work surface. (image 1)
  2. Make one more cut in the middle of the squash to separate the curvy end from the straight end. (image 2)
  3. Stand both halves of the squash on their ends- with the widest part of the curvy end on the cutting board. Then use your knife to follow the shape of the squash, making a cut just under the skin. Repeat this cut until you’ve gone all the way around the outside of both halves of the squash. (images 3 and 4)
  4. While the squashes are standing up, use your knife to cut them in half length-wise. (image 5)
  5. Only the curvy end has seeds, use a spoon to scoop out all the seeds and stringy bits  (image 6)

Et Voila! You’ve done it. Proceed to make some awesome butternut squash amazingness.
